Whole Grain Glory Muffins

My 5 mile run this morning didn’t go as smoothly as I thought/hoped it would. I didn’t feel as though I had the energy I usual do. Oh well, I am not too worried about it.

After stretching, I refueled on this protein-rich breakfast. Oh, was this delightful!!

– 1 slice of No Knead Bread, toasted
– 1 egg, whisked with a splash of milk and ground pepper
– small pork sausage patty (homemade by my father-in-law)

A juicy nectarine!!

All together a very satisfying breakfast I must say!!

Within a couple of hours though, I was hungry again–surprise, surprise–and craving a smoothie.

Into the blender went:

– low-fat organic milk

– 1/2 banana, sliced

– chia seeds

– 1 scoop soy protein powder

– 4-5 large frozen strawberries

So cool and refreshing. 🙂

While running a couple of errands, I stopped at Starbucks for a Passion Fruit Iced Tea. I really like these!!

I requested no ice and got a full 12 oz. beverage–instead of the measly 2 oz. you get by the time they add the ice.

When I returned home, it was well past lunch, so something quick and simple was necessary.

A turkey panini sandwich on whole wheat bread with provolone cheese, lettuce, and tomato.

A few organic tortilla chips along with some red pepper slices and carrot sticks to round out the meal.

While I ate, I skimmed the pages of this book I checked out from the library. It looks like a really interesting book–a little wordy but the things they talk about are really interesting!

I also got this book from the library.

Yes, I do realize I got the “large print” book. Go ahead, call me old!! Actually, it was the only copy available, so I quickly snatched it up.

I haven’t been getting into any of the books I’ve checked out lately, so I hope that is not the case with this one. Has anyone read this?

The next few hours of my day were spent looking at new cars. Yes, it is time I trade in my 2003 Oldsmobile Alero for something new.

I primarily looked at the Honda Civic and a Subaru Impreza. I really liked both, but they were both a little more than I hoped to spend, so we’ll keep looking.

After that hard work, it was time to whip up some muffins–Whole Grain Glory Muffins.

These muffins are so incredibly scrumptous!! They are moist and just downright delicious.

Whole Grain Glory Muffins

Yield: 16 (I only got 14 out of the batch.)

Ingredients:
– 1 1/3 cups whole wheat pastry flour
– 1/2 cup evaporated cane sugar
– 1/4 cup packed natural brown sugar
– 1 1/2 teaspoons baking soda
– 1 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 2 eggs
– 2/3 cup canola oil (I used 1/3 cup canola oil and 1/3 cup applesauce.)
– 1 teaspoon vanilla extract
– 1 Fuji apple, cored, peeled, and diced
– 1/2 cup seedless raisins
– 1/2 cup grated carrots
– 1/4 cup plus 2 tablespoons dried flake unsweetened coconut, divided
– 1/2 cup walnuts, finely chopped

Directions:
Mix flour, cane sugar, brown sugar, baking soda, cinnamon, and salt; break up any clumps. In a separate bowl, whisk eggs, oil, and vanilla–then add to flour mixture. Add apples, raisins, carrots, and 1/4 cup of the coconut, and walnuts. Spoon into muffin tin and sprinkle with remaining coconut. Bake at 350 degrees for 25-30 minutes.

    1. That is such a great idea to ask for no ice in the Starbucks drinks. It drives me crazy how little drink you actually get after all the ice is added.

      I love America’s Test Kitchen. It is wordy but they explain so much, which I love!

      Those muffins sound awesome. Evaporated cane sugar is the same as Sucanat, right?

    1. I will have to try some of your recipes some day. Right now there is not much cooking going on at home because it is too hot and humid.

      Your smoothie recipe sounds good. You could also use soy milk instead of organic milk to give you more protein.

      This is my favorite smoothie recipe:

      1/2 cup fruit (banana, pineapple, mango, peaches, etc.)

      l/2 cup yogurt (plain or flavored)

      1/2 cup soy milk or milk

      5 ice cubes

      2 tsp. sugar (if needed)

      Blend in a blender and enjoy!! Cool and refeshing on hot, humid days.

      I like the chunks of ice cubes in the smoothie.

      I own a body shop and I see a lot of wrecked cars and the aftermath. I wanted to let you know that the
      Kia and Hyundai’s are very good cars. Of course I don’t know what you are interested in. But prices might be better on those cars. Just sharing.
