My 5 Favorite Fall Recipes

Fall foods. . . it’s all about warm soups, hearty vegetables, and comfort foods. Nothing beats coming in from an afternoon walk or my second run of the day to a soup in the slow cooker or my favorite grain and veggie bowl ready to be served up.

Right now, these are a few of my favorite fall recipes: a soup that’s better than the Panera Bread equivalent, an easy one-sheet pan recipe, and a winter grain bowl that blends the flavors flawlessly.

Winter Grain Bowl with Balsamic Dressing
This bowl (pictured above) is a perfect make-ahead bowl for lunches throughout the week. Most salads get soggy by the next day, but the heartiness of the kale helps this stay fresher for a few days. I love the mixture of flavors in this bowl, and you can seriously impress people with the presentation of this dish.

Slow Cooker White Chicken Chili
Nothing beats throwing ingredients in a slow cooker or Instant Pot, walking away, and coming back to dinner done with very little work. I did make the Instant Pot version of this White Chicken Chili, and Craig said is the best version I’ve made. That’s saying something because I’ve made a fair share of white chicken chilies over the years.

Lemon Parmesan Shrimp + Broccoli & Cauliflower Bake
I just made this recipe tonight, and I loved the simplicity of it–just chop everything, throw it on the pan, and roast for about 20 minutes. I should have served it over some rice since I need more carbs as a runner, but it was still delicious and easy nonetheless.

The Best Broccoli Cheese Soup
If you like the Panera Bread Broccoli Cheese Soup, do yourself a favor and make this! It is so good, so hearty, and so cheesy! After making it the first time, I make it again the following week right away because it was so good. That’s saying something because I rarely make a recipe a second time around–and definitely not the next week again.

Healing Chicken and Rice Soup
You can’t have too many soups in the fall, so I am going to include three soup recipes in this post. I have made this soup for friends who have had babies, for get-togethers (pre-Covid), and multiple times since discovering it. The flavor of the lime and ginger is so good, blends so well with the chicken and rice. It is really quick to whip up, and we often double the recipe for plenty of leftovers.
