Minnesota –> Alaska

I feel like it took me all week to catch up on life, but I am finally getting back in the routine here in Alaska.

Cullen and I arrived back in Anchorage at 3:00 a.m. last Saturday morning after leaving at 8:00 p.m. on Friday from Minnesota (5:00 p.m. Alaska time). He actually woke up Friday morning having threw up and proceeded to throw up three more times. Poor guy. I thought we were going to be in for a rough flight back to Alaska, but thankfully everything went okay! He didn’t get sick, and we both slept for a few hours on the plane. We even had two layovers–one in Portland and the other in Seattle–before returning back to Anchorage.

I recapped the first part of our trip to Minnesota in this post. I then ran a half marathon while in Minnesota, which didn’t go all that well, which you can read here. We wrapped up the rest of our trip with more time on the farm, a lot of baby snuggles with my niece Kaylie, good food, and a lot of fun company.

Cullen loved everything about the farm from helping feed the kitties to taking a pig to market to riding the “Rhino.” He spent every waking hour outside helping Grandma and Grandpa or playing in the dirt.

I got to try a few new (to me) restaurants while I was in Minnesota. My favorite place was Agra Culture. Just check out this Agra Bowl with brown rice, zucchini, chicken, a cream lime sauce, and kale pesto. It was so good! I could eat something like that every day.  I also tried Cafe Zupas and ate at Chipotle for only the second time in my life.

I soaked up every warm, hot, humid run I could often running midday just because I could! It was in the 80s most days with plenty of sunshine. I did attempt another marathon-specific workout, but it was pretty hard to hit the paces I wanted to. The effort was definitely there, but my cardiovascular system didn’t appreciate the humid air and warm temps. I still loved it though!

While we were gallivanting around Minnesota, Craig was hunting in the middle-of-nowhere Alaska. His party got a moose, so we will have plenty to eat this winter. Not sure I’ve had too much moose in my life before.

Since returning to Alaska, running has been much easier, and I’ve been able to hit faster paces much more easily. I still miss the heat, but it is easier to train in cooler temps. I will have a full recap of all my workouts coming on Monday, so stay tuned. If everything goes as planned, I plan to hit 67 miles for the week!

I am enjoying being back in my kitchen again. I am loving savory breakfasts lately like this one with kale and bacon, fresh tomatoes from our garden , and scrambled eggs with pesto on top. If you have never tried pesto on your eggs, I highly recommend you do. It is so good! It was on accident I came across this combo as I wanted to put avocado or salsa on my eggs but we didn’t have any. Now I’ve put pesto on my eggs every morning this week.

This past week Cullen also started preschool! He will be going twice a week for a few hours each day. I am excited for him because he loves spending time with other kids, and it will be good experience for kindergarten in two years. He said his favorite part was playing with the different toys.

I am working this weekend at Skinny Raven. We are having a big fall sale, so if you live in the area come on down! I also plan to do my long run Sunday morning, so let’s hope it goes as well as the last one did!
