Some Like it Hot

Here in Alaska anything over 70* is HOT! But I’ve always said, I may live in Alaska, but I’m not an Alaskan because this is my ideal temperature. And for the past several days it has been in the 70s and low 80s, which makes me incredibly happy!

We have been drinking lots of water, mojitos (with mint from our garden), cold smoothies, and anything else refreshing. Cullen loves drinking water too.

Monday I went running around noon with the jogging stroller and soaked up all the warmth and sunshine I could, Tuesday was an early morning tempo run, and today is a rest day! Yeah!

I am still hooked on my egg burritos for lunch.

In yesterday’s burrito I add one of these spinach cakes I found at Costco. Usually I resist the urge to buy pre-made food as much as possible, but with a baby and a high caloric need due to breastfeeding and running, I’ve opted for a few convenience foods in our freezer and fridge.

I actually thought these were pretty good. Craig was quite disgusted when he saw them in our freezer. The first ingredient is actually potato, and while they aren’t the best thing I’ve ever had, they aren’t horrible either. I actually really liked it in my egg burrito.

These are the uncooked flour tortillas we have been using for a couple months now, and I don’t foresee us going back to the regular pre-cooked ones. Not only do these taste way better, but they also don’t have 20 ingredients in them.

Cold, refreshing smoothies have been enjoyed a lot these days. This one included frozen berries (another Cost purchase), banana, almond milk, chia seeds, honey, and protein powder.

I received a sample of this Everlast vegan protein powder. I liked it, didn’t love it.

    I 100% agree that those young coconut pieces are literal crack. Our costco hasn’t stocked them in a while and for good reason I’m glad as you can seriously down a bag of those, pay for the effects later, and still want more!

    Have you tried any chicken or fish burgers from Costco? We just bought the wild salmon burgers but I’m not overly impressed. I also usually refrain from buying premade food like that but sometimes you just don’t have time to cook.

      Not the chicken or fish, but I did just buy the turkey burgers. They are good, but I don’t know that I would buy them again.

    i’ve been wanting to try those dried coconut pieces! we moved last month & now live near the costco in nashville so i think we are going to join. we always go with my grandpa, but i’ve never tried the coconut. the mango pieces by that brand are also amazing! much better than any other dried mango i’ve had.

      The mango pieces are also crack! I wish they didn’t have the added sugar otherwise I would buy them often. I hemmed and hawed about a Costco membership, but we use ours all the time now!

    The weather here in Corvallis has been in the 80’s. Too hot for me! It’s funny since Eastern WA is in the 100s all summer long, but it bothered me less there since it was so arid.

    I like kefir-ade. We brew water kefir (you may recognize dairy kefir? It’s similar) and mix it with lemonade and it’s delicious. Or Arnold Palmers- lemonade mixed with iced tea.
