Happiness Awaits

One week before college started, our cross country team would train together at a resort in northern Minnesota. We would literally eat, sleep, and run every day with lazy afternoons spent swimming in the lake, lounging on the shore, playing sand volleyball, and taking boat rides.

Each night groups would take turns making dinner for everyone. Dinner always included a dessert and Happiness Pie was the most anticipated dessert of the week. A sweet graham cracker crust with fresh fruit enveloped in creamy vanilla pudding and topped with Cool Whip.

Seriously, you must make this for your next special treat! It is super easy and always gets raves reviews.

Happiness Pie

Ingredients
1 graham cracker crust
1 Jello instant vanilla pudding packet
1 8 oz container of cream cheese, room temperature
1 tsp. vanilla extract
1 1/2 to 1 2/3 cups milk
Fruit: bananas, kiwi, strawberries, blueberries
Directions
Place a layer of sliced bananas and a layer of kiwi on graham cracker crust. Whisk together cream cheese and milk. (A blender works really well.) Add dry pudding mix and vanilla extract and mix well. Stir in blueberries into pudding mixture. Pour mixture into pie crust. Add strawberries on top, a layer of whipped topping, and another layer of strawberries.
Serve and enjoy the happiness!

I can’t say this is healthy, but it is amazing nonetheless.

Monday I did a track workout after work instead of at the crack of dawn. I recruited Erin to push me during my workout since she loves 200s and 400s–and it much faster at these distances than I.

We ran 200s, 400s, and one 800 for a total of 2.5 miles at 5K or faster pace. It was a tough workout, but I was glad for a running buddy. Erin really challenged me to push through to the end. I was also very happy to hit all of the paces my coach had given me and even ran faster on a few of them!

Today’s (Tuesday’s) early morning workout was an easy 4 mile run—an easy day before I hit the treadmill in the morning for another interval workout.
