Cooking Class

Last night, Craig and I went to a cooking class at Let’s Cook Alaska.

It was held at a couple’s house in Anchorage. We walked into their house and saw this amazing kitchen!

Craig loved the open shelving. I just loved everything about it!

When we came into their home, we were warmly welcomed by the husband-wife team who put the dinner on. After an intro about how Let’s Cook Alaska came about, we began to make delicious creations.

This was our work station during the evening.

Each person  made 3 different items:

– stuffed cucumber or tomato

– bruschetta

– a salad

There were three options for each item so that we could customize our own meal.

These tables contained all the different ingredients.

The first thing I made was a stuffing for my cucumber.

It contained chickpeas, feta, roasted red pepper, lemon, garlic, and s&p.

The hostess said she only uses kosher salt in her recipes for its ability to bring out the flavors better in a dish and the lower sodium content.

Craig chose a different recipe so that we could share and try several different things.

He was totally in the zone when prepping his food. He really enjoys cooking but has done less and less since we’ve been married. I think that needs to change. šŸ˜‰


The second recipe I made was the topping for my bruschetta. 

I mixed tomatoes, mozzarella, and fresh basil in a balsamic and olive oil dressing.


My third recipe was a bleu cheese dressing for my Wedge Salad with Bleu Cheese Dressing.

Then we all sat down to sample the food we had made. (There were about 12 people there.)

Craig made a Caesar Salad with grilled chicken and a tomato (back right) stuffed with an olive mixture.

Craig and I loved the cooking class and would definitely do it again.

I loved how all of the food was made with fresh, quality ingredients. It was a lot of fun to make our food and then eat everything. And the best part was I didn’t have to clean up afterwards!
