Bacon Kale Potato Soup

Fall is here!

Except it snowed in Alaska on the last day of summer. Go figure!

Despite that, I have been on the soup train for quite some time with chilly temps and leaves on the ground thsi month including this Bacon Kale Potato Soup that I made the other night for my family. I first published this post 10 (TEN!) years ago. It was time to update it, take some new pictures, and showcase this soup that even made the local news!

Who doesn’t love a simple recipe that comes together quickly with minimal utensils. This recipe only requires one pot to make it, so there’s no need to dirty a ton of appliances or utensils. Another bonus was that I already had all of these ingredients on hand, so I didn’t need to buy anything extra. And with the fresh produce that Craig grows for us in our backyard, I was able to use potatoes, carrots, and kale from our garden. A definite win!

The soup was a hit in our house. Okay, at least Craig and I loved it. Cullen said it was “pretty good,” and Bjorn probably mostly just ate the bacon and some of the broth. But that’s another win in my house.

Bacon Kale Potato Soup

Servings: 4
Prep time: 10 minutes
Cook time: 25 minutes

Ingredients

4 strips of bacon, cut into bite-sized pieces

1 medium onion, chopped

3 carrots, chopped

3 garlic cloves, minced

5 medium yellow potatoes, chopped

3 cups kale, chopped and loosely packed

1-1/2 teaspoons sea salt

1/2 teaspoon ground black pepper

2 teaspoons paprika

3/4 cup half and half

Directions

1. In a large pot, cook the bacon over medium heat. Cook until bacon fat becomes visible.

2. Increase the heat to medium-high and add the onions, garlic, and salt. Saute until onions are translucent and garlic is aromatic.

3. Add carrots and potatoes and saute for 2 minutes.

4. Add water to the pot until the potatoes are just covered. Bring to a boil, reduce heat, and simmer for 10 minutes or until potatoes are tender.

5. Add kale and cook for 1 minute or just until wilted.

6. Stir in the paprika and pepper.

7. Mash some of the potatoes (but not all of them) with a potato masher.

8. Stir in the half-and-half.

On the running front, I finally turned a corner this week, and am feeling MUCH better and more recovered after the RunFest Marathon. It took nearly a month to the day to recover, so it feels good to be back to my normal self!

On the family side, Bjorn turns TWO on Monday! In some ways it feels like I just had him. (I can still recall everything about that first day in the hospital with him.) We are going to Alyeska for a little family getaway/celebration and then just having a very small party with my in-law’s on Monday. I’m looking forward to it. I decided to go with a car theme for his party since he loves playing with Hot Wheels cars.

    This soup looks soo good. I think I’m going to make it next week and see if I can get my fiance to eat kale. I think having potatoes and bacon in there with the kale will help.

    I made this tonight and it was so good! I added about a cup of red lentils, everything else i kept the same. Just wish i made a double batch!
