Two-A-Day

Brrr!!! It was cold here today!!

Mid-50s, cloudy, rainy, and windy. . . . .I’ll take my sun, 80s, and warm weather instead!

I had to pull out the long-sleeve turtle-neck top this morning for my run.

Prior to heading out, I had 3 Clif Shot Bloks. I don’t like eating a full breakfast, but I wanted something to hold me over for the run.

I knocked off 9 miles this morning in 1:17.

It was a good run. I feel like I have been recovering quite well from the marathon.

I also chose on of my favorite routes to run this morning, so the familiarity was a welcomed sight. As much as I love new routes, times goes by a lot faster when it is a familiar route.

Breakfast

It feels good to be back to eating my own food again! (Although it was nice not to have to prepare my food.)

Last night I cooked up a batch of steel-cut oatmeal.

If you remember, I had a bowl of old-fashioned oats before leaving for Minnesota but had to practically choke them down because frankly, I’m tired of old-fahioned oats. I wrote that I was going to make some steel-cut oatmeal when I got back, and I am a woman of my word!

I am amazed how different each type of oatmeal can taste: old-fashioned vs. steel-cut vs. Scottish oats. One would think they would more-or-less taste the same, but I don’t find that to be the case as all. I am glad because I love oats for breakfast!

I know many people don’t like preparing steel-cut oatmeal because it takes too much time, but I often make a large batch on the weekends and then reheat it throughout the week. Trust me, the taste is not compromised.

Peanut Butter & Jelly Steel-cut Oatmeal

steel-cut oatmeal + milk + cinnamon + brown sugar

toppings: Trader Joe’s Almond Butter with Roasted Flaxseeds + raspberry jam + sliced banana + chia seeds

This is a more expensive brand of jam but totally worth it in my opinion.

After breakfast, I spent a lot of time stretching and using The Stick to massage my muscles.

I did not bring this guy along to Minnesota, and boy was he missed. I don’t know why I didn’t bring it along because it could have easily fit in my suitcase seeing I have the travel size.

Lunch

Lunch was also a winner!

I have a hard time eating just a salad for lunch. My true love if for sandwiches.

This sandwich was amazing all around: Great Harvest High 5 Fiber bread, ham, provolone cheese, tomatoes, green pepper, spinach, and avocado!

So good!

And a side salad to increase my vegetable intake.

For many months I held off buying dressing. I had good intentions of making my own and just try to use a simple olive oil and balsamic dressing. But I rarely made my own, and I quickly got tired of olive oil and balsamic, which then meant I was eating less salads. Not a good thing.

So, when I went to Trader Joe’s, I picked up this bottle of dressing.

I now know why it is a “best seller.” It is delicious!

More Running

Today was a “two-a-day” for running.

This afternoon I busted out 3 more miles in 24 minutes for a total of 12 miles today!

I wore my new Saucony Ride 4 shoes!

I wasn’t able to watch The Bachelorette last night because our antenna couldn’t pick up a good signal, so that’s next on the agenda!

    As well as THE STICK, I use a foam roller, but when you mentioned it would easily have fit in your suitcase, you had me. Tell me about it as well, if you don’t mind.
