Carbs + Me = Lots of glycogen for speedy running legs 🙂

Sometimes I go a little crazy with my carbs—I love eating them, baking them, and pretty much everything in this post is carb-related!

My breakfast this morning:

I am glad I have rekindled my love for oatmeal. 🙂

Maybe it was the vanilla extract and cinnamon mixed in at the end or maybe the extra banana slices on top! Either way, this was a rockin’ bowl of oatmeal!

These little bunny graham snacks made a special appearance in my bowl of oatmeal, but they started to get soggy, so I had to quickly eat them.

Nonetheless, these graham snacks are awesome!

And for the savory carb lovers: Bacon Cheddar Scones.

I found this recipe on the blog: Dishes of Mrs. Fish. I followed her recipe exactly, which can be found here.

Bacon, cheese, green onions, ground pepper take these savory scones to a new level—maybe not the healthiest thing I’ve ever made though.

Since there was already a ton of dirty dishes, why not make some more, so I made a batch of Anne’s (fANNEtastic Food5-Minute No Bake Peanut Butter Granola Bars.

I followed her recipe pretty closely, but I did make a few changes.

No Bake Sunflower Granola Bars

Ingredients

1 – 3/4 cups old-fashioned oats
1 cup puffed brown rice cereal
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup chia seeds
1/8 cup finely ground flaxseed
1/2 cup agave nectar

1/3 cup sunflower seed butter
1 teaspoon vanilla extract

Directions

1. In a bowl, combine the oats, cereal, pumpkin seeds, sunflower seeds, chia seeds, and flaxseed.

2. In a separate bowl, combine the agave nectar, sunflower seed butter, and vanilla extract. Microwave for 20-25 seconds—or until softened.

3. Pour wet ingredients into dry ingredients in small amounts. Mix until incorporated.

4. Press into a bread pan.

This was the cereal I used for the puffed brown rice.

I actually made the following granola on Saturday, but it seemed relevant to include it with this post. 😉

I made a very similar batch last weekend but tweaked a few things this time around.

Pumpkin Cranberry Granola

Ingredients

4 cups old-fashioned oats

1 cup pumpkin puree

1/2 cup agave nectar

2 teaspoons vanilla extract

1 teaspoon kosher salt

1/3 cup pepitas

1/3 cup dried cranberries

Directions

1. In a large bowl, mix oats with pumpkin thoroughly.

2. Add agave nectar, vanilla extract, salt, pepitas, and cranberries. Mix until well incorporated.

3. Spread granola on baking sheet lined with parchment paper.

4. Bake on 350 degrees for 30-35 minutes, stirring every 5-7 minutes.

And my last carb-related item: a new box of crackers I tried.

Back to Nature Poppy Thyme Crackers

These are some of the best crackers I’ve ever had! The poppy seeds and thyme give the crackers a nutty, flavorful taste that is unlike anything I’ve tried before.

    YOU MAKE ME SO HUNGRY!! Those scones and the granola made my stomach growl. I am obsessed with carbs too!! I dream about them. The best part of my weekend was taking two naps yesterday!!

    On a side note – I spotted hair tinsel this weekend! I was at the salon to get my hair cut, and one of the reception girls had it in her hair (she was probably early 20’s). Then, when I was getting my hair cut, the stylist working next to me had it, too! She was probably in her 40’s! So odd! I guess it is in Rochester, although I’ve never seen it before. 🙂

    When I saw your post I immediately thought “oh boy, if Ross sees those scones I’m going to have to make them.” Just a moment ago from a silent office I heard him shout “BACON CHEDDAR SCONES!??!?!?!? Jenn….”

    So they will be on our menu sometimes very soon. I really want to try your granola too!

    Did the pumpkin cranberry granola that you made stick together? It kind of looks that way in the picture.

    What are pepitas?

    Is agave nectar like honey or different?

      Some of the granola did clump together.

      Pepitas = pumpkin seeds

      Agave nectar is different than honey. Agave nectar comes from a cactus plant and has a lower glycemic index than most sugar products.
