Birthday Eve

There is something terribly wrong with this picture!

Yes, it was -4 this morning, and yes, it is MARCH. . . . only in Alaska. (sigh!)

Okay, I’ll give Alaska the benefit of the doubt. This was the afternoon temp, so I guess that helps. . . . kind of. 😕

Tonight’s dinner was courtesy of a recent Runner’s World recipe—a “healthified” mac ‘n’ cheese dish called Creamy Cauliflower Mac.

This recipe used cooked, pureed cauliflower for the “cheese.” However, there was still actual cheese in the dish as well.

Craig really liked the dish, and I thought it was okay. I prefer our Vegan Mac ‘n’ Cheese more!

Someone has a very special day coming up. . . .and that would be moi! And it is my birthday tomorrow!!

Craig found out today that he has to fly to Fairbanks tomorrow for work, so he won’t be able to spend the day with me. 🙁 But he made up for it by taking me to the new Skinny Raven store (a.k.a. Skinny Mini) tonight and buying me a new pair of running shoes for my birthday eve! 🙂

This was the first time I had been to Skinny Mini (a smaller version of the Skinny Raven store downtown), and it was a cute little store specializing in running gear!

There are a lot of running shoe options for males and females!

And Danskos galore!

It looks like they do gait analysis as well. I need to have this done!

They also sell Sweaty Bands in the store (left side of the picture)! I’ve heard such good reviews about them that I can’t wait to try one! I just need to decide on a design and thickness. Any suggestions?

I was just giving the thumbs-up sign—not specifically for the Adidas shoes. I actually didn’t like them at all.

I really did try on all these shoes, plus more! I am just too indecisive. . . . or do I just know what I like. 😉

I actually ended up with the same shoes I’m running in now (Mizuno Wave Inspire 6), but I got the newest model–Mizuno Wave Inspire 7.

No running for me today because I’m still feeling under the weather. 🙁 I think it is going to be a couple days yet.

I love running around the lakes of Minnesota, running after my two boys, and racing anything from the 5K to the marathon. I have been blogging here since 2010 when I ran my first marathon. I finally secured my sub-3 hour marathon after trying for 8 years.

    I love Newtons! I can see my orange baby girls in the photo but I think I’m going to opt with a new colour. I also have attempted to make that macncheese and it is the bomb.com./

    I’ve been brand loyal to Mizunos for a long time, then I randomly switched to Asics after a gait analysis…WELL the asics basically gave me gigantic blisters on the arches of my feet and my big toes. I am currently running in a pair of Brooks, but once these have died I am switching back to Mizunos. Why fix it if it isn’t broken?

      I tried a pair of Brooks on hoping they would fit well, but they didn’t. I’ve had the Asics Nimbus give me blisters before too.

    i wear sweaty bands all summer long! love them! i only have the thin ones cause the fleet feet where i found them didn’t have any thick ones, so i’m no help. i do love them though!

      Do you have one of the really thin ones that’s less than an inch in width? I was thinking about getting that one but didn’t know if it would even do anything??

    That mac ‘n cheese looks yummy! I think cauliflower is a cheesy vegetable, so it goes well! Butternut squash is also a great “cheesy” veggies.
