Homemade English Muffins

I enjoy making things from scratch: muffins, bread, pizza dough, but for some reason (until recently), I’ve never considered making English muffins from scratch.

But low and behold, I have now successfully made English muffins from scratch! 🙂

There was actually one other time I attempted to make English muffins, but let’s just say they didn’t turn out too well.

This time, I found a different recipe, and things went much better. I followed this exact recipe.

They were definitely a bit labor intensive, but I enjoy baking, so I don’t consider it wasted time.

The most labor-intensive part came when I had to whip the egg whites.

At first I thought, “oh, I’ll just put them in my Kitchen Aid mixer and whip them in there.” So I put the 2 egg whites in the large bowl, turned the mixer on to high, and let it do its thing.

After a few minutes, I checked the progress, but the egg whites looked no different from when I started. I noticed that the egg beater could hardly reach the 2 egg whites in the large bowl! I was thinking, “oh great, now what am I going to do!” There is no way I can stir/whip a whisk fast enough to create peaks of egg whites.

But then, low and behold, I remembered that I had a hand beater, so for the next 20+ minutes, I attempted to whip eggs by hand!! Oh boy was that a good forearm workout! I never quite reached the desired consistency, but I was tired of turning the little hand crank.

Nevertheless, they turned out great! They are exactly like the ones you buy from the store, but the difference in flavor and texture isn’t a bad thing!

They are a little more dense and have a slightly fried flavor from frying them in the pan.

Today’s run: 14 miles

Time: 2:00

Today’s run went really well! 🙂 My legs felt fresh, and I was barely sore by the time I finished. Usually my hips/muscles are pretty fatigued by the time I’m finishing up, but I could have gone at least another mile. 🙂

Clash of the colors. . . .I know!

The Gu brand is definitely my favorite brand of energy gels! The flavors don’t taste funky at all, and I’ve liked almost every flavor I’ve tried!

I took random amounts throughout the run:

45 minutes – 25%

75 minutes 30%

90 minutes – 30%

end – 15%

I spent a solid 30 minutes foam rolling and using The Stick after my run while I finished watching The Curious Case of Benjamin Button. (I couldn’t stay awake last night when we started watching it. It turned out to be a much longer movie than I thought!)

Mileage for this past week:

Monday: rest

Tuesday: 7 miles/3 miles, 25 minutes weights

Wednesday: 5 miles

Thursday: 8 miles/3 miles, 30 minutes weights

Friday: 5 miles

Saturday: 6 miles

Sunday: 14 miles

Total: 51 miles

Next week I’m shooting for 54 miles. 🙂

    I’m partial to Clif Shot Gel because the brown rice syrup is easy on my stomach, but I have one lonely package of Gu that I’ve been meaning to sample. Maybe on my next long run this week!

    Great Run! I agree completely about the Gu- I had my first Gu during the Disney marathon- the chocolate flavor one. I loved it and will have them if I ever run over 10+ miles. I have only tried berry and choc. I wonder what other flavors they have.

    My favorite thing to make from scratch is choc chip cookies =) I like them so much better than slice n bake.

    I also love homemade applesauce- fresh, cinnemony, right off the stove.

    Were your egg whites cold when you started beating them? Leave them warm up a little while and then try beating them. I think they beat better at room temperature.
