Homemade Croutons

Last night Craig and I had a date night “in.”

I enjoyed a little bit of salad for dinner:

Yes, I wear my jacket and scarf inside all the time because I’m always freezing!!!

We were being decisive on what to do but finally decided to rent the movie: Red from the Redbox. I love $1 rentals! 🙂

I’m not really sure why I agreed to watch this movie because I don’t particularly enjoy watching a lot of fighting/shooting on TV or movies. It definitely wasn’t bloody fighting but still not my cup of tea.

Oh well, Craig enjoyed it, and we got to cuddle, so all was good!

Workout

The day following a long run, I usually rest and take the next day off, but since I missed a run earlier this week, I decided to run a few miles this morning at a comfortable pace.

It was an enjoyable 6 miles in 53 minutes. It was cold again though (10 degrees) and very icy!! I’m lucky I didn’t wipe out.

Tonight for dinner I made homemade croutons to add to my salad!

I don’t know why I haven’t done this before because they are a great compliment to my salad. Plus I love crunchy foods!!

I started by cutting “day-old,” dried out bread into cubes. (I’ve had this bread in the fridge for a while, so it was time to use it up.)

I then lined a pan with foil, spread the bread out, and sprayed the bread with olive oil using our Misto.

I baked the bread cubes for 20 minutes in a 350 degree oven.

So delicious on my salad–way better than store-bought croutons!

On a random note:

I am always intrigued when the same item is called two different things such as: grocery cart vs. buggy or drinking fountain vs. bubbler.

When I read your comments about my Peanut Butter Bars, I saw most of you referred to them as “bar cookies” (or “cookie bars”). Growing up in Minnesota, they were strictly referred to as “bars.” So interesting!

Things I am excited for this week:

– 2 full days of school + 2 half days + no school on Friday (We do have teacher in-service.)

– No school the following Monday (President’s Day)!

– Hopefully lots of running–that is if the weather doesn’t get too cold!

– I have two new recipes I’m excited to try + homemade pizza is on the menu!

    I’m excited for Girls on the Run practice today, my husband getting to come home for the weekend on Friday, and no school on Monday! Which is especially nice since I have to get my hubs to the airport at 6:00, which means waking up at 5:00.

    On a side note-I always wear my scarf indoors too. Sometimes it is just too cold not too.

    We watched the movie “Red” tonight (Sunday Feb. 20). It was picked out by dad and Michael, but I sat down and watched it, too. We had a snowstorm today so we had no where to go. There is about 6 inches of snow outside and the wind is a blowing.
