Tofu Perfection

I have attempted to make baked tofu a couple times before, but the results haven’t always been that good.

However, I have now found tofu perfection in Caitlin‘s recipe for Perfect Baked Tofu.

This is my new favorite meal:

roasted potatoes + roasted broccoli + Perfect Baked Tofu + Trader Joe’s Harvest Grain Blend

So good!

A perfect combination of whole grains + lean protein + two vegetables.

(Usually I will roast a sweet potato, but I had this regular potato left over from the Salmon Chowder.)

I am feeling absolutely exhausted today! 🙁

I was still feeling tired last night, so I decided to skip my run this morning, which allowed me to sleep for a solid 8 hours. I thought this would do the trick, but I still felt fatigued all day long!

It is not like me to take a day off–usually I will keep pushing myself through–but a lot of other stressors in life are also playing a part. I am just glad this is a “cut-back” week in training.

The amount of daylight was something I never gave much thought to until living in Alaska. Now having lived here, I will never take advantage of “normal” daylight hours again!

5:00 p.m. today

While most of you are back to reasonable hours of daylight, Anchorage is just over 8.5 hours of daylight, with our sunrise still not happening until 9 a.m. . . . . . grrrr!!!

Sunrise ~ 9:00 a.m.

Sunset ~ 5:30 p.m.

At least it is now light when I get home in the evening, but I’m still driving to work in the dark.

    Something that made me smile today: the amazing sunrise I just saw (at 7 am here in Vermont). Gotta admit though, I do not want to be awake for the sunrise tomorrow (another reason to smile)!

    your dinner looks good! have you ever tried cooking tofu in a pan? i suppose it’s kinda fried that way but you don’t use a lot of oil so i don’t think it’s too bad. i don’t like baked tofu because i don’t think it’s crispy enough… but maybe i need to try this recipe.

      I tried cooking tofu in our wok before, but it stuck to the pan. Should I have used a non-stick skillet?

      The baked tofu I made was kind of “tough” (in a good way) on the outside, but I like crispy/crunchy foods, so maybe I’ll have to give your method a try!

    That tofu looks delicious! I may have to try it again, like you I had given up after a few failed attempts to make it taste good.

    I smile when:
    Its 5pm and I am heading home from work and its that beautiful time of evening when the sun is just setting and the shadows are everywhere.

    I bake or when my roommate bakes and our condo smells like something delicious!

    I think of my family and boyfriend and how lucky I am to have them in my life.

    Kimchi is delicious! I was totally afraid of it at first, and it takes a little getting used to, but I lived in Korea for about 10 months and I got so used to it that now I just crave it sometimes. How weird!
