Pancakes and a Run

I was out the door a little after 8 a.m. this morning for my run. It was my goal not to procrastinate and get out earlier than normal, so I had more time to do other things. πŸ™‚

Don’t mind the fact my face matches the color of my jacket.

I made sure to wear my YakTraxs on my run this morning. The city can be so slow some times to get out and plow the streets.

I ran 6 miles in 53 minutes. It was a nice, quiet run, but I sure was lacking energy. I’m just glad I wasn’t doing a long run and going twice the distance!

Before my run, I had one of these Vita Top Muffins.

I had seen these on other blogs and had been wanting to try them, but was too cheap to pay full price, but when I saw they were 50% off at the grocery store last night, I decided to give them a try.

There were 4 muffins individually wrapped in the box, which I thought was a little excessive.

These muffins are found in the freezer section, so in order to prepare them, the box suggests toasting them or putting them in the microwave; I chose the toaster.

This is a great pre-run food option, although I think I should have had something else to eat because I was lacking energy on my run.

I have been craving pancakes lately, so I made a point to make some this morning for Craig and I.

Don’t be fooled by how boring they look. This is my go-to recipe for awesome-sauce pancakes! πŸ™‚

Greek Yogurt Pancakes

(Based off this recipe)

Yield: 8 pancakes

Ingredients

1/2 cup all-purpose flour

1/4 cup whole wheat pastry flour

1-1/2 teaspoons baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons sugar

3/4 cup soy milk

2 oz. non-fat homemade Greek yogurt (or store-bought Greek yogurt)

1 egg

1 teaspoon canola oil

Directions

1. Combine the flours, baking powder, baking soda, salt, and sugar together in a bowl.

2. Combine the soymilk, yogurt, egg, and canola oil in a separate bowl.

3. Fold dry ingredients into wet ingredients and mix just until combined.

4. Drop by spoonfuls onto non-stick grilled and cook until the pancake starts to bubble for about 1 minute. Flip and cook until golden brown on both sides.

I also had a couple of clementines. Love how easy they are to peel!

Craig and I are off to run a few errands, then date night!! Yippee!!

    I love Egg-Bake when I plan ahead to night before to make it. Did your family make that in MN? I am doing some research on the origins of Egg-Bake.

    I’m glad to see you running in Yak-traxs – I LOVE mine, though we hardly have ice.

      Yes, my mom makes egg bake all the time! Craig always requests it when we visit my parents!

    Greek yogurt pancakes are some of my favorites. Lemon yogurt really makes them pop!

    Anywho, I always make time for breakfast. I am just a much happier person when I do.
