Nutritional Yeast

There’s no better way to start my morning than a hot bowl of oats (loaded with my favorite toppings) after a cold run! πŸ™‚

old-fashioned oats (with a boat-load of other things mixed in) + banana + sunflower seed butter + Pistachio Orange Granola my sister made for me (delicious!)

Once again, I woke up sounding like I was ready to cough up a lung, but I still desperately wanted to run, so out I went for a dark, cold run. Not ideal conditions, but I’m too addicted to give it up. πŸ˜‰

I really wanted to run for an hour today, and that’s exactly how long it took me to complete 7 miles. Overall, it was a pretty decent run. I really tried to pick up the pace a little and run closer to my “summer” (8 minutes/mile) pace.

Craig and I also went to the gym tonight, where I did 30 minutes on the elliptical. It was a nice, light workout to loosen up my muscles. My muscles (quads, abs, and arms) are still sore from my weight lifting session on Monday.

Nutritional yeast seems to been one of the latest crazes among foodies.

What is nutritional yeast?

– It is a deactivated yeast.

– It is similar to brewer’s yeast.

– A good source of protein and vitamins.

– The taste has been described as nutty or cheesy.

– A popular item among vegans to be used as a cheese substitute.

Where can nutritional yeast be found?

I found this is the bulk section of my local grocery store.

I’ve now made a handful of recipes using this yellow powder that reminds me of flaky fish food. And actually it was a part of both my lunch and dinner today.

First up lunch: “Cheesy” Chickpea Quinoa and Spinach

Quinoa mixed with chickpeas and nutritional yeast served over a bed of wilted spinach.

I also enjoyed a Honey Graham Clif Z Bar for lunch.

Then for dinner tonight, I had a serving of the Vegan Macaroni and Cheese I made last night.

We loved this dish so much all 6 servings are completely gone!

I also had steamed broccoli and a salad. The salad dressing I used was another recipe which contained nutritional yeast.

I followed Emily‘s recipe for her Favorite Homemade Salad Dressing and drizzled it on my salad tonight. That’s all I’ve got for today. Two more work days, and then a 3-day weekend! Yipee! Craig and I are already making plans, and I can’t wait!! πŸ˜€

    I push my coffee maker button ha. I also have to use the bathroom and then I check my email and go make breakfast before swim practice.

      No, no special reason for all the vegan foods. It was purely coincidence.

    I have always wondered what that stuff is. Love the informational posts, I learn SO much!! I always go potty first too…..I drink way too much water.
