Tumbling Down

I was super excited about dinner tonight. I had been thinking about it all day! 🙂

I had leftover vegan pesto to use up from the Vegan Pizza I made a while back, so why not make some more pizza. I know I can always win my husband over with pizza! 😉

While we loved the taste of the vegan pesto, it was far too oily for our taste. If we made it again, we would definitely cut some of the olive oil out of the recipe.

I think that’s why my stomach isn’t feel all that great–even though I only had two small pieces.

pesto + tomatoes + red onion + broccoli + fresh mozzarella

I also baked the pizza dough in the oven for a few minutes before adding any toppings, and I think that really helped the crust from getting soggy.

Run

I think I jinxed myself when I said I hadn’t fallen on my run yesterday because I definitely hit the pavement this morning.

I was barely 5 minutes into my run when I found myself lying flat on my back, in the middle of the street. Good thing there wasn’t any traffic on the road at 5 a.m. because I definitely sat there pouting and contemplating how this had happened since I was going about 0.5 mph.

Just be aware: corners are DANGEROUS!

I was hoping to run 5 miles today, but it was just way too slippery and my body was aching from my sickness, so I called it quits after 4 miles. I was bummed, but still glad to get for a while at least.

What is up with me? This is now the 4th time I’ve been sick in four months.

I honestly rarely get sick. But then again spending 4 days, in a 500 square foot cabin, with 4 other people who are sick doesn’t leave you with very good odds of not getting sick.

After work, I stocked up with some essential drugs.

And now I’m downing the drugs in hopes I can get a good sleep tonight.

    I love the comment from your student! Micah singing the Johnny Appleseed prayer at supper made us laugh. He’s starting to sing it all, not just the amen’s at the end and he’s hilarious. Kevin’s comment at the end was that we needed to videotape him!

    I hope that you didn’t hurt yourself when you fell. I could tell you that you shouldn’t be running when it is icy, but I know you will do what you want to.

    One of my students in my nutrition class told me that her parents won’t let her get married until she’s at least 21. I told her that was a great idea – she should go to college and have an adventure first! She replied, “Yeah, I really want to go visit Nebraska.” Hilarious.

    I ran into one of my students at a burger joint, and she ran over to me all excited. “Mrs. ______, you eat cheeseburgers?! I only thought you ate oatmeal!.” It was priceless.
