Workout

When I went to bed last night, the winds were howling outside, which made me nervous for my run in the morning! But thankfully, the winds subsided–as they often do overnight. There was still a little breeze in the air this morning, but nothing like last night!

I was pretty tired this morning when I woke up. This surprised me because I was asleep by 9:30 p.m. last night. My legs also felt quite tired, which I’m not sure why because I only ran 4 miles yesterday.

So needless to say, I wasn’t feeling full of energy this morning, but I rocked out 5 miles.

I usually don’t take pictures of my meals, but for whatever reason I decided to today. 🙂

Breakfast

I prepared a bowl of overnight oats last night for my breakfast this morning.

It’s been a while since I’ve had overnight oats, so I decided to take a break from steel-cut oats and cold cereal and change things up a bit. I love how quick and easy it is to grab this pre-made breakfast.

In my overnight oats:

plain yogurt + milk + old-fashioned oats + chia seeds + agave nectar + vanilla extract + frozen berries + walnuts + coconut

Lunch

There was some leftover chili from Monday night’s dinner, so I heated it up and had some Kashi crackers on the side.

Wow, did the heat intensify on this chili since Monday! It was pretty manageable on Monday night, but today my face was red and my nose was watering! But still as good the second time around!

Snack

I’ve had these kid’s Clif bars before, but this is definitely my favorite flavor! I love graham crackers, so this was a great afternoon treat!

Dinner

It was Craig’s turn to cook tonight! 🙂

He chose to make this Garbanzo Bean and Potato Curry that is super easy to make!

Garbanzo Bean and Potato Curry

Ingredients

1 medium potato, chopped

1/2 onion, chopped

15.5 oz. can garbanzo beans, drained and rinsed

14.5 oz. can diced tomatoes, undrained

13.5 oz. can coconut milk

2 Tablespoons red curry paste

hot rice

Directions

1. Cook potatoes in non-stick skillet until softened.

2. Add onions to pan and cook until translucent.

3. Add garbanzo beans and diced tomatoes. Allow to stew for a while.

4. Stir in coconut milk and red curry paste. Cook until heated through.

5. Serve over hot rice.

(Craig forgot to make rice, so I quickly cooked some pasta–it worked.)

We find this in the Thai section of the grocery store (non-refrigerated).
