Fall is in the Air

Don’t get me wrong, I lovelovelove fall!

I love the cool, crisp mornings and the warm afternoon sunshine.

I love running in the fall.

I love eating pumpkin-flavored foods and fresh, crisp, in-season apples.

I love the changing of the colors on the trees.

(I wish I could take credit for this picture, but I cannot.)

I love the smell of fall in the air.

I love breaking out sweatshirts/sweaters and jeans. (Well, actually in Alaska, I have to wear pants and (multiple) long sleeves year-round, but you get the idea.)

But there is a slight problem. (In my opinion.)

1. Fall starting at the end of August/beginning of September is much, Much, MUCH too early for fall. Fall should come around the middle of October!

2. And secondly, fall is far too short here for how great of a season it is! I really lasts only 3-4 weeks. 🙁

And as I’ve said before, the only reason I don’t like fall is what comes next. . . WINTER!! But at last, I rest my case.

Now on to my eats for the day–all prepared last night, ready to-go for a full 13 hours at school! Yeah, we have an “open house” this evening for families, so I have to stay for that.

Breakfast was identical to yesterday’s breakfast (I even borrowed the picture.), but since it worked out beautifully for an on-the-go breakfast yesterday, I decided to make it again.

On my way into school this morning, I stopped by Kaladi Brothers Coffee (best coffee in Anchorage, hands down, btw!) for a decaf iced Americano. I really do enjoy hot coffee every once in a while, but I think I enjoy iced coffee even more!

For lunch, I prepared a pasta dish.

Complete with:

– 1/2 cup (measured prior to cooking) pasta

– steamed broccoli

– pinto beans

– marinara sauce

I also enjoyed some watermelon to try and embrace every last ounce of summer.

For dinner tonight, I made a salad that was nearly identical to yesterday’s. I guess when you find something that works, you stick with it.

– spinach

– tomaotes

– avocado

– cashews

– dried cranberries

– cheese

– carrots

All to be enjoyed with some poppy seed dressing.

I brought some Food Should Taste Good Multigrain chips to go alongside my salad.

    I can’t stand winter either and do dread its arrival…but fall will always be my favorite season. Luckily here in the south it lasts more than 3-4 weeks typically. I don’t think I could handle it getting cold too fast.

    I picked up Trader Joes chips that have flax seed in them so had to comment on them along with their fresh salsa okay that was my treat. I am on my countdown for my trip. I also was having arch problems while I don’t run I do walk so realized I had gone without new shoes and once I got the shoes and had some inserts too I am back in business. I hope that the new shoes will do the trick.

      That’s so encouraging! I really think my arch problem was from my shoes as well because I ran in another pair of shoes this morning, and I didn’t have any problems!! 🙂 Yeah!
