Kid’s Cross Country Race

I knew exactly what I wanted for breakfast even before going to bed last night. What can I say? I’m a planner.

Wild Alaskan Blueberries!

I heart my yogurt bowls!

In the mix:

– plain yogurt

– vanilla extract

– agave nectar

– 1/2 frozen banana

– blueberries

– chia seeds

– flax

– Quaker Oat Squares – cinnamon flavor

– almond butter

I am totally diggin’ this new sunflower seed butter!

Confession time. . . . sometimes I like to have chocolate for breakfast! (gasp!) I know, right? Maybe it was the espresso beans calling my name this morning! Just two small pieces were enough to satisfy the craving.

This morning, some of the kids I teach were running in a cross country meet near where we live, so I hoped on my bike and rode to the course to cheer them on! (Don’t mind our garbage cans behind me!)

By the time I got back home, my stomach was calling for food!

One of my favorite ways to get a ton of veggies is through a Green Monster. It is so good and contains so much spinach!

Key ingredient: vanilla extract–makes it taste so much better.

I love drinking them with a straw.

I also had a piece of 100% whole wheat bread toasted with one egg seasoned with salt and pepper.

So simple, yet so delicious!

Craig and I are off to enjoy the sunshine since it is finally shining for once!!
