ABC French Toast

I had the most amazing French toast this morning for breakfast!

ABC French Toast

A = almond butter

B = banana

C = chia seeds

(I also did enjoy it with some pure maple syrup, but that didn’t fit it with the other letters, so I just left it out. 😉 )

I apologize for not having accurate measurements for this recipe. I used to be one of those people who needed specific measurements when baking/cooking (Okay, I still am!), but I’ve gotten better about tossing in a little of this and a little of that.

ABC French Toast

Ingredients

– 1 egg

– milk (approximately 1.5 Tablespoons)

– cinnamon (app. 1/4 teaspoon)

– vanilla (app. 1/4 teaspoon)

– agave nectar (1/2 teaspoon)

– 2 pieces of bread

Toppings

– almond butter

– banana, sliced

– chia seeds

– pure maple syrup

Directions

1. Whisk egg in small bowl. Add milk, cinnamon, vanilla, and agave nectar to bowl and mix until combined.

2. Pour egg mixture into pie plate and dip bread into egg mixture, coating both sides.

3. Fry bread on both sides in a non-stick skillet until browned.

4. Add toppings.

5. Eat and enjoy!

Totally hit the spot after my run!

I can’t wait to make this for Craig as soon as he gets back! (He’s the best man in a good friend’s wedding this weekend.) I feel like I haven’t seen him in forever because our schedules have been so crazy busy! I’ll be glad to spend some quality time when he gets back!

Before Craig left for the wedding, he bought me these flowers–just because!! I didn’t post a picture of them before because they finally opened up!

This morning was the first morning this week I went running before work. I had been doing my runs in the afternoon, which was nice because it allowed me to get some extra sleep that I had been deprived of.

I ran 3 miles this morning. I was hoping to go 4, but my arch started hurting, so I figured I’d better take it easy and not push it. (That’s hard for me to do!)

Yeah for a three-day weekend. It is MUCH needed! This teaching stuff is kicking my butt and zapping me of energy!

    I see you like to use those chia seeds a lot. I have never heard of them, what are they like and why do you use them so much? Just curious 🙂

      I do eat a lot of chia seeds, don’t I? (lol) They are known for their high omega-3 fatty acids–like flax is, but they are supposed to be better than flax. Runner’s World magazine featured them a couple months ago. (I don’t know if you get the magazine.) They don’t have any taste to them. I add them to things for the nutritional benefit. 🙂

        Thanks! Thats kinda what I figured, but I didn’t know if they added any flavor or if it was a texture/nutrition thing. 🙂 They kinda look like poppy seeds, too. I’ll have to look for them next time I am out!

          No added flavor but some texture–mostly nutrition. They do look like poppy seeds. 🙂 They might seem expensive initially, but they do last a long time.

    Love this recipe – I’m definitely giving it a try post-run tomorrow morning 🙂 My husband doesn’t care for french toast so much, but I bet if I added peanut butter to it he would try!
