Round #2

Tonight was a bakin’ and bloggin’ night, two things I’ve dearly missed since school started!! (I am a teacher for any new readers. 🙂 )

First item up on the menu: Zucchini Pizza!! I made this last week but still had ricotta cheese left, so tonight was round #2, and this bad boy was once again ah-mazing!! Plus this is a quick and easy recipe with just a little bit of prep the day before.

Step 1: Make KG’s Homemade Pizza Dough at least 24 hours beforehand, and then spread on cookie sheet sprinkled with cornmeal.

Step 2: Spread crust with ricotta cheese and minced garlic mixture. (See recipe link for amounts.)

Step 3: Top with shredded zucchini and cheese.

Step 3: Bake until golden brown.

Slice and devour!!So cheesy and dee-licious!!

With a side of steamed broccoli.

For dessert, a small bowl of coconut ice cream drizzled with Creamy Dark Chocolate Peanut Butter Spread!! I love how the peanut butter solidified when it came in contact with the ice cream!

What could be better than peanut butter + chocolate? I’m excited to see what else I will spread this stuff on!
