Remember to Eat Your Veggies

I will admit, I sometimes struggle to eat enough vegetables each day. I have to be very intentional about getting enough veggies– whereas I naturally crave fruits and carbs.

The ways in which I do get my vegetable intake are by roasting them, steaming them, eating them raw, or in a Green Monster Smoothie.

I especially like broccoli steamed. Broccoli should only be steamed for 2-3 minutes. It should be a nice bright green color. If you overcook it, it becomes very mushy and then no one likes it!

I also roast a lot of veggies: zucchini, yellow squash, sweet potatoes, broccoli, and brussel sprouts. I stick them in the oven at 400 degrees for 12-15 minutes, flipping half-way through. Before putting them in the oven, I spray them with olive oil and sprinkle seasonings on them. Some of my favorite seasonings include: lemon pepper, garlic powder, salt, and pepper.

And finally, I enjoy eating vegetables raw–such as carrots, peppers, grape tomatoes, and cucumbers.

Find different ways to prepare vegetables and make sure to buy produce that is as fresh as possible because it will taste better!!

For lunch I also had a 100% Whole Wheat Oroweat Sandwich Thin that I toasted and spread Reduced Fat Laughing Cow Cheese on along with my homemade blueberry jam. It was delicious!!

This afternoon, I snacked on some of these guys. I have never tried these before, but they were on sale at the grocery store, so I decided to pick them up.

I loved their crunchy texture!! They tasted a little bit like Wheat Thins, but they really did have their own flavor. The only drawback was the long list of ingredients.

It was kind of sad how much wasted packaging there was too.

One of my purchases at Trader Joe’s during my visit to Minnesota was this Almond Butter with Roasted Flaxseed. I saw other bloggers raving about it, so I made sure to pick up a jar for myself. And it was definitely worth it!!

I am not a huge fan of plain almond butter; I like it, but I think the flax in this nut butter adds a much more enjoyable taste. I had some on half of a banana for a snack.

It is now time to go on a picnic with the husband!!
